Nettles Aloo


1 clove Garlic chopped fine

3 medium potato peelt and cut bite sized

1tsp cumin pdr

1tsp coriander pdr

1/2 tsp garam masala

1 tbsp flavourless oil

Salt to taste

Blanch the nettles in boiling water then drain in a colander. Finely chop them and set them to one side. Boil the potatoes in salted water until just shy of being cooked. About 10 minutes should do it.

Heat the oil and when hot fry the garlic , take care not to let the garlic stick to the bottom of the pan adding a bit of hot water if necessary.

When the garlic starts going brown, add the cumin and coriander. Stir for two minutes and chuck all the potatoes in. Fry for a couple of minutes until they start looking starchy. 

Then stir in the nettles, mixing the masala into it evenly. Lower the heat and simmer for about 10 minutes stirring regularly.

Stir in the garam masala powder and simmer for another two minutes or so. Add salt to taste. Indian food Sooke style – tasty and healthy.
